If you’re looking for a new liqueur to spice up your bar, don’t snooze on this one. Suze is an intense and delightfully-aromatic bitter aperitif derived from fresh gentian root. Spice and citrus flavors complement its herbaceousness - almost reminiscent of a dandelion green salad. You can use it as a decidedly less red (and less sweet) substitute for Campari in a variety of cocktails. The white negroni is a classic, though mine always end up more yellow than anything. Trade the vermouth for Lillet Blanc and the Campari for Suze - add your favorite gin and a burnt lemon peel twist.
