Staff Pick Notes

You'd think that all the Suntory Japanese whiskies would need no introduction, but I should rescind that statement. The giant outfit responsible for the acclaimed Hibiki and Yamazaki whiskies, produces another world class spirit, Hakushu, from the distillery of the same name. Different than the the other two, it is a peated style that balances a pretty, spiced nose and a palate of rich cooked fruit. I also love the soft texture and mouthfeel. Japanese water is much less mineral driven than American or UK water. This lends an ease of sipping intermingled with peat and 40%ABV. It's as if you took a peach and barbecued it till it turned black and crispy. It's now savory and maderized, but somewhere the fruit manages to show its face in a different light. Kampai!
