This gin was produced in a converted chapel in Costa Daurada, a coastline just southwest of Barcelona. The main components are sourced from four different Mediterranean countries and balanced out with some local Spanish botanicals. I found that the juniper was a mere whisper; it's very distinctively olive and dried herbs highlighted by citrus oil on the nose. On the palate, you'll discover more savory dimensions like cardamom, black pepper and rosemary. There's also an interesting saline quality on the finish, almost reminiscent of olive tapenade. To pair, I'm thinking light dishes with an olive oil and lemon base, possibly some Branzino or Langoustines?
