Staff Pick Notes

I like the quality, taste, and the price. They are using standard 53-gallon bourbon casks, allowing for proper maturation, utilizing local grains and water source. For craft distillers these days and the people who buy these products (me included), this information is a big deal. I'm less interested in 100% small cask aging because the ratio of wood to whiskey is too high and creates a disjointed profile of additive wood/char character to an under-developed spirit. Anyone who takes the pains to do it right, in my book, should be rewarded. So grab a bottle and a glass and see for yourself!
