The master's at this world class bodega, already world renowned for their fortified wines, have focused their skills on one of the world's oldest fortified drinks with this vermouth. Made from a base of Pedro Ximenez and Amontillado sherries, each aged for 10 years in solera, are blended with infusions of wormwood, gentian, coriander, and orange peel among other botanicals. Like walking a tight rope, the wine is balanced and direct while the well defined flavors hang at the precipice without ever falling over. A must have for vermouth lovers and a excellent addition to the category all around.

We've come to know vermouth as a mere supporting actor in martinis. Thanks to Spain, however, it's getting its due as a star in its own right. Even in cocktails it has taken on more of a starring role. One of my favorite cocktails this summer is the Yayo, a specialty of an old vermouth bar in Madrid. It's a mix of sweet red vermouth, gin, lemon and seltzer. Lustau's is a perfect choice for this with an extra hint of sweetness, while its rich undertones of dried fruit, nuts and spice really shine through. Jerez

Sherry actually gets its name from our anglo-inability to pronounce the word “Jerez,” the town at the southern end of Spain in which the wine is produced. Like Champagne, Sherry can only be called Sherry if it comes from this specific region. That said, there are other “Sherry-styled” wines worthy of note produced outside of the Sherry D.O. (known as vinos generosos). Montilla, lying to the north-east of Jerez, produces some of the finest Pedro Ximénez in the world.
