This is based on Chardonnay, Savagnin and the red-skinned Poulsard grape that is unique to this region of eastern France. The "L'Étoile" appellation got its name from the many fossilized starfish that are found readily sparkling in the vineyards. This Vin de Paille is a dessert wine, sweet yet full of nuts, dried fruits and great acidity and minerals.

I don’t like calling any wine a “dessert wine.” For the same reason I don’t call any wine an “entrée wine.” Yes, there are wines that have more sugar than others but that doesn’t mean you should always save them for the end of the meal. Vin de Paille is a sweet wine but one that I urge you to have with savory dishes. Open the bottle for a perfume of roasted nuts, mead, and flower pollen. The palate is rich but tames its sweetness with ample acidity. Taste candied orange peel, Amontillado sherry, nougat, toffee, and tobacco. Don’t let labels tell you what to do. Sip Sauternes with salted fish, pair some Auslese with spicy curry, and open this for something savory.
