Philippe Pacalet's Pommard is a beauty of Burgundy terroir, but is stylistically unlike most powerhouse Pommard wines. This elegant wine has delicate red fruit flavors backed by a fresh, stony minerality. Pacalet does not own vineyards, but is meticulous about the fruit grown on rented land. He does not use chemicals and has a team to hand-pick and even foot trods! The young natural winemaker was mentored by Chauvet and certainly influenced by his uncle, Beaujolais winemaker Marcel Lapiere. It all comes back to terroir, and true to that philosophy Pacalet makes all of his wines the same way. His Pommard is an ideal Thanksgiving wine to enjoy before the meal and with the main course. You can also be a total baller and pair it with your pilgrim sandwiches the day after.
