A singular rosé with an intense color. This cuvée is made solely from the oldest Pinot Noir vines planted in the village of Vertus. The grapes are crushed and the juice macerates on the skins for two or three days to give the wine its color. After aging in the cellar for a 3 years and a half, the Champagne is disgorged and held another 6 months before release.

Larmandier-Bernier is a biodynamic, grower-champagne producer in the Cote des Blancs. Of their small 15 hectare estate, a prized plot of old vine Pinot Noir grows in the Premier Cru region of Vertus. The rose is made in the rarely used saignee method, in which the crushed grapes macerate on the skins for 2-3 days to pick up the beautiful color you see here. The dark, rich color is indicative of the present tannins and full bodied nature of this rose. The elegant structure and ripe red fruit flavors are in line with a fine burgundy and it should be treated as such. Put the champagne flutes away. After decanting, pour into a red wine glass and serve alongside grilled salmon, strong cheeses or a french dip sandwich (my favorite).
