Pairing Advice

Free-run juice from pre-phylloxera vines! This wine is both densely flavored and incredibly fresh. Peachy and tropical, it may remind you of Sauvignon Blanc: cheerfully fruity, but with a bone-dry finish. Serve with flaky white fish such as halibut, sole, turbot, or tilapia, oven-roasted and topped with a relish of green and red peppers, cilantro, lime, and red onion. Herbaceous notes in the wine and ripe flavors on the palate will play off of similar flavors in the dish.
