The most extraordinary wine of the Jura, the Château Chalon wines are considered to be the top "voile" wine, a Grand Cru of sorts and come from the tiny appellation of the same name. Always a wine that can be further aged for decades. This is made from the local white grape called Savagnin. A complex, eccentric style that is the coveted gem of the region. Oxidative in style as it rests in barrel for a minimum of 6 years under voile and as the wine ages and partially evaporates, the barrel is never topped up.
