Wine made from organically or biodynamically grown grapes with minimal intervention avoiding the use of chemicals, additives and technology.

Orange Wine (Skin Contact)

Orange wine is made by using white wine grapes, which are pressed and left in contact with the skins, seeds, and stems for an extended period of time, similar to how red wine is made.

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.

Staff Pick Notes

The production of this wine echoes the way the wines of antiquity might have been made. Hand-destemmed Ribolla Gialla grapes go into custom-made new barriques, to ferment, macerate, decompose, and mutate. On the eighth full moon after the harvest, the resulting liquid, still cloudy from dissolved grape solids, is drawn off into bottles. Aleš Kristancic, scion of the family that has owned this estate for nearly two hundred years, is a convinced natural winemaker, and while I struggle to decide whether this is his most or least characteristic bottling, it is undoubtedly his most distinctive. Full skin contact captures the fullness of Ribolla's varietal character in a wine of piercing mineral intensity and surprising delicacy and refinement. Decant and enjoy with a hearty dish of veal or pork.
