Savart Premier Cru "Accomplie," Extra Brut - NV

A Champagne made from a blend based on Pinot Noir and Chardonnay. An elegant, dry sparkling wine with a creamy texture that will work with any number of seafood dishes from a simple, steamed lobster to grilled scallops. The base wine is aged in a combination of steel and older oak. This cuvée comes from "first press" juice known as the "cuvée" in French. Naturally, this provides the most unctuous part of the fruit.

Don't let the modern label fool you. The Savart domaine has been making Champagne in Ecuiel for two generations. Frederic Savart's Champagnes are beautiful, precise, and concentrated, with the quality of the grapes providing the main influence on the style of a cuvée. The l'Acomplie is 80/20 Pinot Noir/Chardonnay, although you wouldn't immediately pick up a lot of red fruit on the nose. Rather, you notice a young, yeasty nose with subtle nuttiness, green apple, and a touch of red cherry in the background. The palate is dense and precise with a rich lemon meringue essence and notes of red plum. It closes with fantastic length. An impressively balanced Champagne with youthful impact. Delicious now, but will definitely develop with bottle age.
