This wine is a textbook example of the continuous evolution that inherently occurs while drinking a really good bottle of red Burgundy. Full disclosure - I decanted this wine, but only for about fifteen minutes. On the nose & in the glass I experienced black licorice, black plums, baking spices, old lady/man cologne, a combo of smells that evoked my grandpa's house, slightly chalky texture, a bit of stewed fruit, tannins that seemed to expand over time, damp soil, and eucalyptus. It's a lot, I know, but it's all in there! This Pinot definitely stands up to a steak & even worked well with roasted asparagus. It's a fine example of the appellation, so if you are a fan of the region snap it up before it's gone!
