Winemaker Benoit Badoz represents the 10th generation of vintners at their family domaine. Benoit cultivates his 10 hectares of vineyards in Poligny with the aim of maintaining biodiversity; he plants grass in every other row, uses no chemical products, and plows the soil. He vinifies with only native yeasts and uses minimal levels of SO2. The Vin Jaune has vibrant citrus notes with characteristic nutty, oxidative, saline notes. This takes cheese pairings to the next level. A classic is to have this with a well-aged Comté - the signature cheese of the Jura.
