I love a half bottle of Champagne. It's like a personal-pan pizza; enough to keep you satisfied, not so much to make you regret your decisions. And this half bottle, this golden beauty, is by far and away my favorite choice. Made by a small grower-producer in the Grand Cru village of Bouzy, this champagne expresses ripe yellow nectarine, plum, and lemon cream on the nose, as well just-out-of-the-oven brioche and a hint of toasted marshmallow. There are layers of complexity to discover here. As I enjoyed it over the course of an evening, the flavors evolved considerably. The stone fruit and citrus notes melted into hazelnut and nutmeg. All the while, the wine held its delicate mousse (the bubbles), keeping each sip fresh. This champagne is rich enough to pair beautifully with any meal, and delightful enough to pair with any evening.
