Pech is dialect for a small hill which is exactly where Domaine du Pech is located. Buzet is a small appellation in southwestern France. The wines from here are always full-bodied and benefit from long aging. This is made from equal parts Cab Franc, Cabernet and Merlot and as aged in old casks for two years before bottling. The estate not only encompasses vineyards but a veritable farm with sheep, geese, chickens - a self-sustaining operation that you can only dream of if you live in NYC. The wine has just begun to evolve by shedding some tannins. It still has a long life ahead of it.
