Bisson's dry sparkler is finely balanced, with green apple and floral aromas dominating the complex, heady mix. Chiseled mineral acidity demands a thoughtful pairing with light salads, youthful cheeses and salty, smoked fish. If you enjoy Prosecco, this is essentially what this bottle is as it's made from the Prosecco grape, Glera. However, this is a bone dry rendition of the sparkling wine and very unique for that matter. Sealed with a crown cap and in 2016 this practice no longer allowed for the wine to be labeled as Prosecco all the while listing the grape Glera.

The producer, Pierluigi Lugano, while following the rules in order to have his wine classified as DOCG, decided to put a crown cap instead of a traditional sparkling mushroom shaped cork cap. That's why you don't see the name "Prosecco" on the label. The wine can be named only "Vino Frizzante", sparkling wine. Pierluigi fell in love with Ligurian wines back in the seventies. Now he splits his time between his shop in Liguria on the northwestern coast of Italy and his vineyards in Veneto on the east side. This vino frizzante is fresh, bone dry with a clean flavors, white flowers, green apples, pears, and nectarines. Delicious alone or paired with smoked trout.

Prosecco

Until recently, "Prosecco" could refer either to a wine or to a white grape. In 2009, however, the grape was renamed "Glera" in a bid to protect Prosecco's good name. Prosecco is usually a sparkling wine made by the Charmat method, though still versions do exist. Because it is so easy to drink, with or without food, Prosecco is a hugely popular choice for parties.
