Vittorio Gianni Capovilla has been producing artisanal spirits since the 1980s and is rightfully regarded as Italy's premier distiller. What makes this particular expressions so very unique is that, in alternative to Grappa, which is produced using. Rather than using pomace (the leftovers from winemaking), this spirit is distilled from the fresh Moscato varietal, resulting in a true eau-de-vie.
