Even though we're dealing with a high-proof product, there's a gentle quality, especially if you let the it sit for an hour or so in the glass. But what is a great distiller without great produce? That's where Marie Galante comes in. AKA sugar island, this dependency of Guadeloupe is known for its superior sugar cane and dreamy environs. With every sip you taste the placid beach: oyster brine, lobster shells, young grass, saltwater and just a gentle kiss of tropical fruit. An odd but elegant choice, I like it with one large ice cube.
