It is not fair to choose favorites, but Barr Hill's Tom Cat would have to rank among my very top spirits in the store. Once distilled, Barr Hill's already magnificent Gin is aged for 3 to 4 months in new charred American oak barrels. The result in the glass is dynamic. Lively orange peel brightens the barreled notes of caramel and vanilla. The signature honey and juniper combo is always present and reassuring. Always Gin, almost Whiskey. The deep and subtly sweet finish will leave you blissfully questioning how something so delicious is even possible. I most often sip this captivating spirit over a large ice cube. But do consider this for the ultimate gateway between a Negroni and a Boulivardier.

Pairing Advice

Winner, winner, chicken dinner. Chicken will sing with the first-ever release of aged gin from this outstanding producer (and an exclusive batch made specifically for us). The local juniper berries and raw honey that Todd Hardie has been cultivating for the past 30 years are the start of the show here. The nose is a wonderful back and forth of invigorating floral juniper, which complements the fresh wood notes perfectly. The texture is luscious at first but shifts gears on the mid-palate to show off flavors of clementines, banana, caramel, and sawdust, coming full circle to the extended piney, juniper finish.
