Tasting Notes

Founded in 2003 by three lifelong friends, West Cork is one of Ireland's new and rising distilleries. Preferring a small, hands-on approach to the whiskey-making process West Cork floor malts their own barley (the only distillers in Ireland to currently do so) and sources water from a local spring, also rare for Irish distillers. The result is a complex whiskey for a great value. The opening notes on the nose smell like slightly off-dry, oxidized Chenin Blanc that, after a few moments, hint at creamy malt, granola, lemon, olive oil, honey, kumquats, and sweet spice. The palate is cidery at first and then lager-like on the mid-palate with a medium weight and notes of apple skins, toasted grains, and almonds. A must-try newcomer.

I love Irish Whiskey and so should you. It's some of the best value in the house on aged whiskey and presents a smoother, softer style than their cousins in Scotland or USA. This is due to the triple distillation which i standard practice. Soft fruit, notes of chocolate, vanilla and spice dance on the nose and palate, while the texture is soft and light on its feet. Some folks are religious about savoring their whiskey neat, but I prefer mine with a little ice. Simple and straightforward.
