After more than 13 years maturing in the ground, the wild Barril agave plants are harvested by hand and distilled at the Los Bigotones Palenque by Master Mezcalero Don Gregorio Hernandez in the Oaxacan village of La Compania Ejtula. Notes include barbeque spices, dry rub, lemon thyme, preserved lemons, ripe tropical fruits, cacao fruit, baking spices, chili paste, and clay.
