Laurent Cazotte is a farmer and master artisan located in the Tarn Department in the south of France who produces some of the highest quality spirits in the world. He is also one of the most conscientious producers in the world, farming organically and totally dedicated to the indigenous bounty of the land. For his elderflower liqueur, the flowers are harvested by hand in full bloom and de-stemmed by hand so that only the petals remain. The petals are added to Folle Noire wine (a native grape variety thought to be extinct not too long ago and grown organically by Cazotte) and left to macerate for over three months until the flowers are fully infused with the Pinot Noir-like wine. Next the macerated liquid is racked to extract the concentrated pomace, which is then re-distilled to create the elderflower eau de vie, which is then re-blended in the wine infusion! As with all of his products, the process here in both ingenious and meant to preserve the full integrity of the natural materials. Notes include an intensely perfumed bouquet that resonates with Concord Grapes, cassis, raspberries, and vine flowers. For all of the overflowing aromas and flavors, the liqueur is remarkably dry and finishes with a palate-cleansing dose of tea tannins.

Laurent Cazottes has done it again! Somehow, he has taken something that we think we understand and proven that we were wrong all along. I can say emphatically that this is nothing like St. Germain (and no, I’m not knocking St. Germain). Instead, it is a wild, romping, aromatic illustration of what you can get when you put the essence of a flower into liquid form. Imagine what you’d smell if you were cutting flowers while drinking Earl Gray tea and you’re probably a quarter of the way into experiencing all the scents that escape from this liqueur. It is staggering how much there is going on and you could (and should!) spend hours letting it evolve. This is really not to be missed at any price tag.
