The annual Autumnal release from this excellent Chicago outfit has become one of the most anticipated releases of the season which is no small feat for a gin in the heading into high time for old mature sipping spirits. Each year the team spends countless hours researching and experimenting with what will become a very limited one off vintage expression. This year, taking a cue from the earthy, hearty flavors of the season with a clear nod to borscht, the cool climate staple, beets, dill, black pepper, caraway and cumin have been make up the core of this gin evoking an early morning woodsy pastoral with notes that include wheatgrass, spicy herbs, pine, pureed ginger, malt vinegar and pickled vegetables. Works magic in a Bloody Mary, Martini and more.

Twice a year we have the Letherbee seasonal releases to look forward to. Their regular gin is already a standout for its concentrated flavor and exceptional spice, but the Autumnal and Vernal versions let this Chicago distiller have a lot more fun with the category. This Fall's edition is inspired by borscht. They distilled the base spirit with beets and flavored it with caraway, dill, pepper, and cumin. It's savory stuff, with a rich tomato-y note surrounded by earthy and grassy flavors. It begs for all the savory cocktail applications: dirty martini, tuxedo, even a bullshot (1 part gin/vodka:2 parts cold beef bouillon, season to taste with lemon and hot sauce). Even more simply, sip it cold between bites of smoked salmon or caviar.
