Mezcal is not easy to make! It takes anywhere from 7-10 years for Espadin to mature and it must be harvested before the agave flowers.The piña or heart of the plant is then roasted, in this case for three days. The next step is fermentation, which occurs with wild yeasts in open vats made of pine, and then AFTER that, the distillation process occurs! Minerva Hernandez Melchor, one of the few females in mezcal business, oversees her family's production. This bottling of Espadin really allows the flavors of the plant to shine. Aromas are bright and clean. Green, vegetal and slightly minty flavors mingle on the palate with well balanced hints of smoke. This bottling of Alipus is elegant and light on its feet. It's a great place to start if you have not yet explored artisanal mezcal.
