This sparkling version of the Dassai 50 Nigori makes a great aperitif or great way to toast any celebration. The light sparkle plays well with the fruitiness and acidity.
I was looking for something fun and unusual to drink when I chose this bottle. Let it be known I don’t have much saké experience. I had once tried a still cloudy saké from Dassai and, remembering the pleasant, velvety texture, was curious how that would translate to a sparkling version.
This sparkling saké has a lot of presence, with multiple textures coming from the sediment, the bubbles, and finally the mouthwatering effect of salty flavors. It’s hard to describe the flavor as peachy, because a slight but pleasant funk persisted alongside. I started to crave food as I was drinking, specifically fried tofu drenched in teriyaki. Only something with as much salty-sweet complexity and lots of texture would be a fair match.
