This is a very small producer and their sake in Japanese is called Mukashi No Manma or "unchanged by time" in honor of their traditional practices. The rice is a local variety and it is milled 55%. The flavors are earthy with a creamy texture. This sake is nice both cold and gently warmed.

Staff Pick Notes

I took a bottle of this to a dinner party with several saké skeptics. It was gone shortly after being opened, with requests for more throughout the meal. Luckily it comes in a 900mL bottle so it is perfect for sharing. This Tokubetsu Junmai has a fantastic creamy texture on the tongue. The taste is dry and earthy, with notes of dried tangerine peels and cloves. It is a Junmai, unfortified, and, at 15% ABV, lower in alcohol as a result. From a very traditional producer in Gifu in central Japan, we are lucky to be able to taste such a clean and delightful beverage. This saké is beautiful with a chill on it, and also opens up and offers a different drinking experience with some warmth.
