Miyama Nishiki rice is well suited to the brisk mountain cold of Niigata, producing finely textured sake with layers of complexity. The water, sourced from an underground current originating as snowmelt from Mt Makihata, has been purified on its decades-long journey through sedimentary rock. The slightly elevated proof and bone dry finish actually conveys a similar feeling to that of powdery snow dissolving on your tongue. It's the Imbibable Snowman! Don't let this Yeti elude you.
