Ameztoi (ah-mehs-toy) produces wine from vineyards high on the seaside cliffs overlooking the Bay of Biscay in Spanish Basque country. Bright, lively, and low alcohol, this wine works exceptionally well with shellfish in all preparations while sitting on a yacht off the coast of San Sebastian. I found joy in this wine in another location: my Brooklyn apartment. Fish tacos were on the menu and I was looking for something light on the palate. This slightly effervescent Txakolina (chah-koh-leena) was the perfect replacement for an ice-cold beer. The fresh and tart flavors of lime, lime peel, and green pear meld with underlying notes of fresh tarragon. The richness of the fried fish was mediated by the light sparkle, while the freshness of the salsa complements this wine's racy acidity.
