This Espadín agave mezcal is produced by roasting their estate-grown agave in the traditional method, which, for the Zapotecs, is in a stone-lined earthen pit. The smoke, however, doesn't take over the clay and minerality that we like so much and also provides just a touch of roasted herbs. Every batch is bottled at proof, without dilution. This means theABV will vary from batch to batch.

Made by 4th-generation mezcalero Enrique Jimenez Jr., Fidencio Clásico mezcal is handcrafted from at least 10-year-old Espadin plantings on the Jimenez Estate. Other producers harvest Espadin years earlier, before the agave reaches peak ripeness. In addition, Enrique practices biodynamics on his estate to bring about an even deeper expression of the agave. The jimadors only harvest the agave under a new moon, believing the moon phases play an integral role in the character of the agave. After roasting underground for several days with the embers of black oak, the roasted agave are tahona mashed and double distilled in a wood fired alembic still. Not to be overlooked, Fidencio Clásico has all the makings of a sipping mezcal with a price point built for cocktails! Tropical fruits, dusty minerals, herbs, and earthy smoke. Yes, please!
