An unusual rosé made in precious small quantities. This still Pinot Noir (not sparkling), from old vines grown on extraordinarily chalky slopes in Champagne, was aged in barrels at least three years. Les Riceys is just on the border of Burgundy. As a result, this Pinot is closer in spirit to the Côtes d'Or than Champagne. Serve at a cool, cellar temperature to allow the bouquet to develop. As it sits in glass, you will find a mix of rose petals that constantly changes. Crushed strawberry notes hover over a refined structure and full texture. Tradition dictates serving with rillettes and baguette, but enjoy with whatever you want.

This unusual wine resists what you think you know about Champagne. Maybe decoding the label will help: It's a still rosé from the Aube village of Les Riceys made by the grower-producer Olivier Horiot with grapes from the "En Valingrain" vineyard. You can't really see behind the dark bottle, but this looks more like a light red than a pink rosé you might expect. If you're still reading this and your mouth has started watering, you are a certified wine geek and this wine is definitely for you (or your wine geek friend you really want to impress). Rosé de Riceys has been an AOC since 1945, and includes 15-20 producers, of which Horiot is the only one farming biodynamically. Made from 100% Pinot Noir, here is a beautiful and crisp wine reminiscent of a Loire Valley Sancerre Rouge or a Cru Beaujolais village.
