I met David Ravandi back in 2013 during my time as a bartender at ABC Cocina. He is an owner and a master distiller of 123 Organic Tequila. He brought all of the three bottles with him and we were tasting them side by side. He said something during the tasting that stuck with me: show me your blanco, and then we can talk about the reposado and añejo. What he meant was that blanco is the fundamental, the basic expression of tequila. That’s when I fell in love with the 123 series. 123 Blanco uses all organic blue agave from the lowlands. It’s super floral, grassy, and it’s perfectly drinkable on the rocks or shaken with fresh lime juice.

Blanco

White tequila, an official type (tipo) for tequila bottled fresh from the still, or allowed to rest in stainless steel tanks for up to sixty days before bottling. It is never aged in wooden barrels. Also known as plata, plato, and silver tequila. Usually the most robust, strong-flavoured of the tequila types.
