From several old parcels that produce low yields every year, including 50% Grand Cru Saering, this wine is fermented in 19th century wood casks. With soft notes of citrus pith and the minerality of a mountain spring, this Sylvaner is slightly creamy with acidity that’s long with lingering spice.

Poor lowly Sylvaner... bereft of the signature aromas that lend character to smoky Chardonnay or floral Riesling, it yields distinguished wines only on the most apt terroirs and the oldest vines. While the textural, Chablis-like wines of German Franconia have long been staples of those in the know, a select few sites in Alsace have been gaining increasing attention for a style of Sylvaner that almost could not be more different. Nearly decrepit vines on Triassic sandstone supply an explosion of tangerine, guava, and oolong tea up front, backed up by a finish that is firm, dry and quartzitic. A classic Alsatian, being paradoxically both round and piercing, it will begin to shed some of its baby fat with 5 to 8 years of bottle age, but was also lovely with a Chinese-inspired braised pork shoulder.
