Distiller Laurent Cazottes calls it a liqueur, but this otherworldly beverage defies easy categorization. Cazottes begins by hand-harvesting wild quince on his family farm in the southwest of France, and, in a nearly monomaniacal quest for the most concentrated essence possible, manually destems and deseeds every piece, leaving only flesh and skin. The quince is then macerated in both quince brandy and grape eau-de-vie, lightly “cooking” it for a subtle sweetness before the two infusions are blended for bottling. That light sweetness is the perfect foil for the uniquely feral, beeswaxy, Christmas-spice character of the liqueur. A truly artisanal product in a world where that term has been debased, it is the perfect mind-expanding after-dinner sipper for autumn, especially for those turned off by more lusciously sweet potions.
