This is old-school Burgundy from the Coudray-Bizot domaine. Hand-harvested, fermented with native yeasts, fermented in open wooden vats, and bottled unfiltered.

"Open are the double doors of the horizon; unlocked are its bolts." This is an utterance from the Pyramid Texts, and also serves as the opening words spoken in Philip Glass' 1983 operatic masterpiece Akhnaten. Despite its ancient provenance, these words feel more timely than ever. The future is unknowable, yet always charging at us at high velocity. This inchoate period of our history that we are currently living through is rife with uncertainty. For me, this Nuits-Saint-Georges from Coudray-Bizot is an elegant, purposefully made wine that also offers comfort. From 90 year-old vines this has some nice development on it, and yet has wonderful freshness. Cherries, red currants, dried herbs, and earth make a wonderful pairing for all types of dishes.
