Tasting Notes

Done in the traditional Normandy style known as keeving, the apples go through a cold fermentation that allows for a natural filtration and cleaner juice. The cider has a nice sweetness and slight effervescence.

Pilton is a small artisan cider producer in Somerset, directly south of Wales in the southwest corner of England. Usually apples used in cider are not the ones you find in your local bodega. Cider apples are acidic and astringent which gives the resulting cider balance and tension. When the Keeving method of cider production is used the apples must be particularly low in nutrients. Keeving is akin to lees aging in wine but here the pectin forms a gel that deprives the yeast of nutrients, which stops the fermentation and retains any lingering natural sweetness. Pilton cider has a funky, earthy aromatic nose that gives way to sweet fresh apples on the palate. It has a dry and firm finish. Pairs nicely with goat cheese, but also perfect size for a subway ride (though we do not condone that!)
