Onirocep is Pecorino spelled backwards as a way of humoring locals who didn't think the grape had much going for it. With one sip of this wine, we think it's got quite a lot going on: yellow apple, lemon and grapefruit with fine minerality.

Pecorino (Italian for "sheep") is so called because sheep love to munch this grape on their way through vineyards! Also enjoyed as a snack by shepherds, it's a rare treasure: a grape that's great for both eating and vinification. The Pecorino grape easily accumulates sugar as it ripens, making for fuller bodied wines that often hit above 13% alcohol. Naturally high acidity ensures balance and vibrancy. In its liquid form, Pantaleone Onirocep 2015 shows notes of beautiful, ripe yellow apple, peach blossom, and honeysuckle. On the palate, it's very floral and full, but slightly spritzy with a steely mineral finish. Ideal with a baked fish and cherry tomatoes or a well-dressed salad with goat cheese and pecans—either way, on a balcony in the summer. Or try it with some olives and sliced Pecorino cheese!
