Young Savennières reminds me of myself in high school: abrasive, overeager, and mercurial. The wines show great potential, but like puppies with big paws, they're inclined to charge with excitement, skid on the tile floor and knock over their food bowls. Market trends demand that wines be ready to consume the moment they're bottled. But in the case of Savennieres, only time can elevate the sum of its incongruous parts into a majestic whole. The 2006 Chateau d'Épiré is Golden Delicious apple hued. The nose is an olfactory kaleidoscope of beeswax, apple blossom, white tea, ginger, dried apricots, and clover honey. Its bracing acidity is now warmly subdued, as if wrapped in a wool sweater and reclining comfortably. Age gave this wine wisdom. And we’d all do well to follow in its footsteps: get wise and bring this honeyed beauty home.
