Believe it: some of the best absinthe in the world today comes from upstate New York! Everything being made at Delaware Phoenix is worth seeking out, but this spirit pulls off the miraculous feat of being elegant and refreshing at 68% ABV (but you should still add water for the full, gorgeous louche). Beautifully floral, with a unique violet note and plenty of mint, anise, hyssop, and lemon balm in perfect balance. My favorite part: it truly is a one-woman operation. In the words of Cheryl Lins, proprietor and distiller, “I do the mashing, set the fermenters, run off the low wines, distill the whiskey, haul it to the barrels, fill 'em, and decide then they're ready. Then I bottle them, and am the one who delivers the product to the store.” She’s even been distilling in secret since before the absinthe ban was lifted. Pure love.
