This amari from the Varnelli family (producers since the mid 1800’s) again uses herbs and roots from the Sibillini Mountains and uses honey as a sweetener, like their Amaro Sibilla, but this one is unfiltered and bottled at 21% abv. Bitter, light bodied, cloudy and dry. Give this one a spin.

I believe this is the best amaro. It also happens to be the most expensive one, but the reason I like it so much is because it's made carefully with the best ingredients. Anyway, you get a whole liter of it! Bitter herbs and local honey combine with a touch of smoke to make a truly complex drink. My favorite part about Erborista is the low proof. At 21% alcohol, it's gentle enough next to a coffee with breakfast, and the unusual decision to leave it unfiltered allows the minerally flavor of the raw honey to really pop. With every detail, it's clear this is a special product. I highly recommend this if you're looking to try a new amaro--but your palate might not be the same afterward.

This region lies on Italy’s Adriatic Coast, so much of its cuisine is seafood-based. Marches is best-known for its white wines. Verdicchio produced near the towns of Jesi and Matelica often has gently bitter notes and rich fruit, and is an excellent match for many seafood dishes.
