Chablis Grand Cru "Valmur," Raveneau - 2021

Raveneau’s wines are legendary because they are so rare. He owns a mere seven and a half ha in Chablis and wines from any of his properties are lauded as the best Chablis has to offer. Valmur is located northwest of Les Clos, with exposure to the southwest. Of Chablis’ Grand Crus, wines from this climat need quite a bit of time to age. With fine-boned structure, pure crystalline acidity, a smooth texture, and magnificent combination of floral/mineral overtones, Raveneau’s wines are expressive of both their terroir and their vintages. Allowing the quality of the vintage to determine procedure, he vinifies with either natural or selected yeasts. He will mature all his cuvées in used oak up to 18 months before bottling and sealing the cork them with distinctive yellow wax. All his wines are very pure and capable of rewarding the patient person who guards them in the cellar.
