César Florido is located in Chipiona, a tiny city within the Jerez DO. The area is best known for Moscatel and Florido is one of two independent producers who work outside of the cooperative. In this classic Moscatel, from 15 - 50 year old vines, Arope( grape must reduced through cooking) is added after fermentation to add another layer of flavors. The result is a delicious mixture of dark figs, burnt caramel and raisins. Serve with mincemeat pie, dark fruit tarts, chocolate mousse or aged blue-veined cheeses. .

Jerez

Sherry actually gets its name from our anglo-inability to pronounce the word “Jerez,” the town at the southern end of Spain in which the wine is produced. Like Champagne, Sherry can only be called Sherry if it comes from this specific region. That said, there are other “Sherry-styled” wines worthy of note produced outside of the Sherry D.O. (known as vinos generosos). Montilla, lying to the north-east of Jerez, produces some of the finest Pedro Ximénez in the world.

Flor

Flor is a protective layer of naturally occurring yeast that grows, under certain circumstances, in the barrels after fortification. Its presence (or absence) is what determines the style of a given Sherry. When it does grow, it protects the wine from oxidation while feasting on the available glycerin - the resultant Sherries are thus dry and very pale in color (called Finos or Manzanillas).
