First brewery to make a Yamahai - refers to a process in sake brewing that was discovered in 1909. With this new method the production of the ferment is much easier but still takes roughly 4 weeks. Yamahai sakes are deep and complex and tend to be earthier and smokier than the old method. – Pungent and dry with a complex aromas of earthiness and a pronounced Umami quality flavor.
