This is my second staff pick of a Laurent Cazottes product. Every time I taste one, I become more impressed by the meticulous craft involved in producing these eau de vie. All fruit used for his spirits are harvested, sorted, and de-stemmed by hand. Then he uses natural yeast fermentation...I could go on and on. This is from the rare Mauzac Rose grape variety and displays pretty aromatics of red flowers, light melon, grass, and soft berries. Put an ounce in your glass after dinner and savor for an hour. It will reveal itself like a kaleidoscope.
