Production Methods

Practicing Organic

Wine made from grapes grown without synthetic pesticides, fertilizers and herbicides in the vineyard.

Tasting Notes

Les Moriers is named after the mulberry tree which used to dominate the plantings in the area. This is aged in a combination of large old foudres, concrete tank and stainless steel. The grapes were hand-harvested. Even after many successful years practicing his craft, fourth-generation vigneron Michel Chignard claims to be a novice. He is a modest man, kind and courteous, but in every aspect of his winemaking one clearly sees a passionate perfectionist. Today, his son, Cédric is managing the domaine.

Staff Pick Notes

Gamay is beautifully expressed in Beaujolais, and Fleurie is one of the best sub-regions if you're looing for wines with balance and finesse. Upon first opening Domaine Chignard's, you're greeted with a bouquet of ripe red and dark fruits, followed by a light musk that develops as you drink. This particular Fleurie stood out to me; while it's still perfumey and has a great overall mouthfeel, it also had more earthy components and the tannins had slightly more grip...which only increases its versatility when pairing with food. I decided to open this bottle on a night that we had veal and porcini ragu, and its depth married perfectly with the range of flavors of this dish. This wine is light bodied but carries a lot of complexity with a finish that lasts until you take your next sip.

Astor's Glossary of Terms

The range of wine styles offered in Burgundy rivals that of any other region. In Chablis, Chardonnay is left unoaked to produce lean, crisp, steely wines with incredible acidity - a far cry from the vanilla-oak bombs that so many consumers associate with this grape. Fans of rich, unctuous, and well-oaked Chardonnay will enjoy Chassagne-Montrachet, whose age-worthy offerings offer all the fatness...

Beaujolais is the classic expression of the Gamay grape. These red wines (labeled simply “Beaujolais”) are approachable, grapey, and fun – ideal for low-pressure sipping. Beaujolais-Villages is a step up. Compared to basic Beaujolais, the rules for Beaujolais-Villages wines are more strict. Villages wine is produced in far smaller quantities. Beaujolais Nouveau is perhaps the most gulpable wine...
