The organic production style of Novo Fogo cachaça values human handiwork over mechanical methods. To start, fields of sugar cane grown in the Floresta Atlantica rain forest are harvested over several weeks using only machete. Distillation happens nearby in the alambique (microdistillery), which is purposefully built into a mountainside to course liquids from one process to the next. The resulting blanco cachaça is aged in Four Roses bourbon barrels, which the distillery has hand-disassembled and re-charred. (Compare this product to Four Roses Astor Exclusive Bourbon.) Novo Fogo Organica Aged Cachaça exudes its locale: aromas of luscious flora and sea breeze, tropical bananas baked into bread. Try it in a classic caipirinha or in a comforting hot toddy.
