This "Cuvée du Silex" is the reserve bottling of Pascal Janvier. The soils are flint-dominated and the resulting minerality is astounding. This is made from Chenin Blanc and comes from the tiny appellation of Jasnières due north of Vouvray. An unctuous white that's full of raw honey, chamomile, and white flowers. Delicious and supple, and an excellent companion to soft and hard cheeses.

Drool-worthy, Enchanting, Voluptuous! Jasnières is a small Loire appellation located 50 km north of Tours. This almost off-dry expression of Chenin Blanc is made by butcher-turned-winemaker Pascal Janvier. Not exactly a mash-up between Vouvray and Savennières, but close. Flinty and crisp, redolent of ripe peaches dripping with icy cold juice, honeycomb flecks, white roses and the freshness of clear spring water over smooth white stones lets this gorgeous wine shine on it's own. Pairings: spicy coconut curry, smoked trout with horseradish cream, Persian koo koo and rose water-scented tadig.
