Do you, like me, think it's hard to go wrong with Champagne? Or does this logic undermine the art of choosing a top-notch bottle? Maybe, so I'll share with you the secret of Georges Laval Champagne. Exceeding any rigorous, if vague, parameters for "high quality" bubbly, Vincent took over his father's operation of growing, hand-riddling, and hand-bottling Champagne in 1996. Small production is an understatement--every bottle passes Vincent's hands. He keeps an eye on his neighbors' land so pesticides play no role in his organically tended vineyard. His brut nature effuses lemon chess, fresh brioche, and apple orchard. The palate is malic and pointed, but not annoyingly sharp. Spending time with the wine reveals gentle hazelnut and unfolding complexity. As you pour a glass say "enchanté." You are shaking hands with Vincent of Cumières.
