Not all Chablis is made equally. It's easy to categorize the wines from this region as energetic and lean, but sometimes the fruit and the wine maker dictate the outcomes differently than what we as consumers may expect. That's part of why drinking great wines can be so exciting. Every bottle is an adventure! In the case of Philippe Pacalet and his 1er Cru "Beauroy," whole clusters of fruit, a warmer fermentation & fermentation in large foudres amount to a richer style for the region. This south facing vineyard provides generous fruit and the wine undergoes full malolactic conversion, offering a more creamy texture than more typical Chablis. Acidity is present, but not a punch. This wine is an experience to drink, with a long life ahead of it as well. If you've never had a Pacalet wine, DO IT NOW.
