Staff Pick Notes

This bottle is pretty old-school Barolo. The Stefano family only uses big, old Slavonian oak and doesn't inoculate with yeasts or control temperature during fermentation. It's got more acid than you might expect in a red wine. If I was going to describe the flavor profile to you, I'd talk about sweet tar, roasted herbs, fennel, and tobacco before anything else. Yet for all that, there is an immediacy and concentration to the fruit (boysenberry, dried red cherries) that's hard to find in young Barolo. The tannins are present, but hardly overwhelming or tight like most young Barolo. It's a refined, elegant style of Nebbiolo that you can easily enjoy in it's youth, but one with the stuffing and savory aromatic complexity to keep on changing and delighting in the years to come.
